Gastronomy

The cuisine of the area, as well as the Calabrian cuisine in general, loves strong dishes, exciting for smells and tastes.

 

The main part is occupied by the home-made pasta with flour obtained by Calabrian  durum wheat.

 

The vegetables also occupy an important place in the local cuisine.

 

In particular, the tender eggplants, with which you prepare the "parmigiana" with hard-boiled eggs cut into slices, mozzarella or provolone, sausage pepper, parmesan or pecorino cheese, tomato sauce.

The cuisine makes extensive use of herbs (basil, parsley, sage, oregano, bay leaf, rosemary).

The chili is  present,  in its many varieties, in many typical dishes , and  gives the right spicy to the food.

The chili is consumed, as well as fresh, preserved in oil and dry. Equally used the garlic and red onion.

Do not forget that we are in the land of sausages and brawn, prepared still following ancient methods of working and observing a meticulous natural seasoning.

Renowned cheese factories  produce dairy products (cheese, mozzarella cheese, milk cheese, ricotta)

Deep-rooted is the tradition of preparing and storing products in oil.

You can enjoy sun-dried tomatoes, olives, eggplant, mushrooms, peppers

 

The presence of vineyards in the hilly areas enables the production of excellent red and white wines.

 

All accompanied by the smell of good bread baked in a wood oven, according to the most ancient and deep-rooted traditions. In many areas it is still used to make bread at home.

 

The production of oil i remarkable, through olive groves which find their ideal habitat on the sunny hills that overlook the sea. Lush forests of pines, beeches, oaks, firs, almost close to the coastal zone, are the ideal habitat for mushrooms and berries.

Particularly delicious, the mushrooms have a place in the local cuisine.

 

They are very  used to flavor pasta dishes, are also used dried or preserved in oil. Most appreciated the berries (strawberries, blackberries, currants) used for jams and liqueurs. And do not forget the desserts! Especially during Easter and Christmas holidays, delicious desserts are prepared using ancient recipes handed down for generations.
